4 cups chopped broccoli, florets and tender stalks
3 cups chicken or vegetable broth
1 small onion, diced
2 teaspoons minced garlic
1 teaspoon celery salt
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
1 (12 oz) can evaporated milk
4 cups shredded sharp cheddar cheese
2 tablespoons cornstarch mixed with 2 tablespoons water (optional)
Prepare the broccoli by chopping it into small, bite-sized florets and peeling the tough outer layer of the stalks before chopping them as well.
Add the broccoli, onion, garlic, celery salt, onion powder, salt, pepper, and broth to the slow cooker.
Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours, until the vegetables are very tender.
Stir in the evaporated milk and shredded sharp cheddar cheese.
If you prefer a thicker soup, stir in the cornstarch slurry at this time.
Cover and continue to cook for an additional 15-20 minutes until the cheese is completely melted and the soup has thickened to your liking.
For a smoother soup, use an immersion blender to break down the broccoli to your desired consistency before adding the cheese. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if it thickens too much.
