Ingredients

1 lb lean ground beef
2 cups cubed potatoes
1 cup frozen corn kernels
1 cup diced green peppers
1 cup diced tomatoes with chilies
1 onion, chopped
2 garlic cloves (minced)
1 cup water or beef broth
1 tsp dried oregano
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 cup shredded cheddar cheese (optional)
Fresh cilantro or parsley (for garnish)

Instructions

Brown ground beef in a skillet (optional step)
Combine all ingredients in slow cooker bowl
Place lid securely and cook on low
Wait 8 hours or until fully cooked
Sprinkle cheddar cheese on top
Switch cooker to ‘Keep Warm’ mode for 15 minutes to melt cheese
Garnish with cilantro or parsley
Serve with cornbread or over rice noodles

Notes

For lighter version: Use ground turkey or lentils instead of beef
