1 tbsp extra virgin olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 lb ground beef (85% lean)
1 packet taco seasoning (low-sodium recommended)
4 cups chicken broth
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can pinto beans, rinsed and drained
1 (15 oz) can corn kernels, drained
1 (10 oz) can diced tomatoes with green chilies
1 cup long-grain white rice
1/2 cup heavy cream
Heat the olive oil in a large pot over medium heat.
Add the onion and sauté until translucent, then add the garlic and cook for another minute.
Add the ground beef and cook until browned, breaking it apart with a spoon; drain any excess fat.
