1 medium yellow onion, diced
2 cloves garlic, minced
1 pound ground beef (85% lean)
1 tablespoon taco seasoning
4 cups chicken broth (low-sodium)
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) corn kernels, drained
1 cup uncooked quinoa, rinsed well
1 cup heavy cream, room temperature
Salt and black pepper to taste
Fresh cilantro, chopped for garnish

Instructions

Heat olive oil in a large pot or Dutch oven over medium heat.
Add the onion and sauté until translucent, then add the garlic and cook until fragrant.
Add the ground beef and brown thoroughly, breaking it apart with a spoon; drain excess fat if necessary.
Stir in the taco seasoning until the beef is well coated.
Pour in the chicken broth, black beans, corn, and rinsed quinoa.
Bring the soup to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is tender.
Temper the heavy cream by stirring a small amount of the hot soup into the cream before slowly pouring the mixture into the pot.
Stir gently to combine, season with salt and pepper to taste, and serve warm with fresh cilantro.
