Ingredients

Scale

1 lb ground turkey
1 tbsp extra virgin olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) corn kernels, drained
1 can (10 oz) diced tomatoes with green chilies
4 cups chicken broth
1/2 cup heavy cream
1/4 cup sour cream
Optional: Avocado, lime wedges, and cilantro for garnish

Instructions

Heat olive oil in a large pot over medium heat.
Add the ground turkey and cook until browned, breaking it up with a spoon.
Stir in the diced onion and garlic, cooking until the onion is translucent.
Add the taco seasoning and stir to coat the turkey evenly.
Pour in the chicken broth, diced tomatoes with chilies, black beans, and corn.
Bring the soup to a gentle simmer, then reduce heat and cover; let cook for 20 minutes.
Stir in the heavy cream and sour cream until well combined and smooth.
Remove from heat and serve warm with your favorite taco-inspired toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The soup often tastes even better the next day as the flavors meld together. If the soup becomes too thick upon reheating, add a small splash of broth to reach your desired consistency.
