A cool, creamy pasta salad with fresh vegetables, perfect for summer gatherings. Combines al dente elbow macaroni with a tangy mayo-based dressing and crisp veggies like cucumber, bell peppers, and green onions.

Ingredients

1 lb elbow macaroni
1 cup mayonnaise
1/4 cup apple cider vinegar
1/4 cup sugar
1 tsp salt
1/2 tsp black pepper
3/4 cup grated cucumber (1 large)
1 red bell pepper (seeded, julienned)
3 green onions (sliced)
Optional: 1/2 cup frozen corn (cooked), 1/2 cup grape tomatoes (halved)

Instructions

Cook macaroni according to package instructions until al dente
Drain and cool in ice water, then drain again
In a large bowl, mix mayonnaise, vinegar, sugar, salt, and pepper until smooth
Add cooled pasta and vegetables to bowl
Toss evenly to coat with dressing
Chill for at least 30 minutes before serving

Notes

Dressing can be made 1 day ahead
Add dairy-free parmesan if desired
Store in airtight container for up to 2 days
Test pasta doneness with a single piece while cooking
