1/2 cup salted butter
12 fresh sage leaves
1/2 yellow onion, finely chopped
3 cloves garlic, minced
1 cup unsweetened almond milk
1/2 cup low-sodium vegetable broth
15 oz can pumpkin puree
1 tsp sea salt
1/2 tsp black pepper
1/2 cup grated Parmesan cheese
2 cups fresh baby spinach

Instructions

Boil a large pot of salted water and cook the rigatoni according to package directions until al dente.
Meanwhile, melt the butter in a large skillet over medium heat until it begins to brown and smells nutty.
Add the fresh sage leaves to the butter and fry for 30 seconds until crisp, then remove them and set aside.
Add the onion to the skillet and sauté until soft and translucent.
