Enhanced with aromatic garlic, onion, and fresh spinach, this hearty one-pot meal is the perfect sophisticated yet approachable solution for chilly weeknight dinners.

Ingredients

Scale

1 pound halal Italian chicken sausage (casings removed)
1 1/2 pounds Yukon gold potatoes (cut into 1-inch dice)
1 tablespoon olive oil
1 cup yellow onion, diced
1 tablespoon fresh garlic, minced
1 teaspoon kosher salt
Fresh cracked black pepper to taste
2 tablespoons all-purpose flour
4 cups chicken broth
2 cups beef broth (halal/beef stock)
1/2 cup heavy cream
1 cup fresh spinach leaves
1/2 cup diced tomatoes (optional)

Instructions

Heat a large Dutch oven over medium-high heat and add the chicken sausage, browning it thoroughly while breaking it into small pieces.
Remove cooked sausage with a slotted spoon, leaving the rendered fat in the pot.
Add the onion to the pot and sauté until translucent, then stir in the garlic until fragrant.
Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to cook off the raw flour taste.
Pour in the chicken and beef broths slowly while scraping the bottom of the pot to release the browned bits, then return the sausage to the pot.
Add the diced potatoes, salt, and pepper, then bring to a simmer and cook for 15-20 minutes until potatoes are fork-tender.
Use a potato masher or fork to mash a portion of the potatoes directly into the broth to thicken the soup.
Stir in the heavy cream and fresh spinach, cooking until the spinach is wilted.
Adjust seasoning if necessary and serve warm.

Notes

Ensure your beef broth is certified halal to maintain the dietary integrity of the dish. Scrape the fond well for maximum flavor depth. Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop.
