4 boneless, skinless chicken breasts
1 cup ripe peaches, pureed (about 3 medium peaches)
2 tablespoons Dijon mustard
2 tablespoons all-purpose flour
1/2 cup fat-free half-and-half
2 tablespoons unsalted butter (softened)
2 cloves garlic (minced)
1 teaspoon honey
1/4 teaspoon black pepper
1/2 cup chicken broth
1 small onion (finely chopped)
2 tablespoons cooking oil
1/2 teaspoon salt (optional)

Instructions

Preheat a large skillet with oil over medium-high heat.
Pat chicken dry and season with salt and pepper. Sear in the skillet until golden (5-6 minutes per side). Remove and set aside.
Add butter to the same skillet. Sauté garlic and onion until fragrant.
Stir in flour and mustard, whisking until smooth.
Add pureed peaches, broth, and half-and-half. Bring to a simmer.
Pour in the honey and adjust sweetness if needed. Return chicken to the skillet, flipping once to coat.
Reduce heat, cover, and simmer 8-10 minutes until chicken is cooked through. Garnish before serving.

Notes

Use frozen peaches (thawed) if out of season.
Substitute coconut milk for a dairy-free option.
Letting the sauce cool slightly thickens it; adjust with a splash of broth if too thick.
