4 boneless, skinless chicken breasts
1/2 cup lime juice (about 3 limes)
1/4 cup olive oil
2 chipotle peppers in adobo sauce, minced
1/4 cup fresh cilantro, chopped
1 tbsp honey
1 tsp salt
1 tsp black pepper
2 ripe mangoes, diced
1 red bell pepper, diced
1/2 red onion, finely chopped
1 tbsp lime juice (additional)
1 tbsp fresh cilantro, chopped (additional)
1/2 tsp chili powder
In a blender, mix chipotle peppers, lime juice, olive oil, cilantro, honey, salt, and pepper to create the marinade
Place chicken breasts in a large bowl and pour the marinade over them. Toss to coat and refrigerate for 30 minutes
Preheat grill to medium-high heat. Remove chicken from marinade and discard excess. Grill for 6-8 minutes per side, until cooked through and slightly charred
While grilling, combine diced mango, red bell pepper, red onion, cilantro, and chili powder in a bowl
Toss with lime juice and adjust seasoning as needed
Serve grilled chicken hot or at room temperature, topped with mango salsa
