1 pound lean ground beef
3/4 cup yellow onion, finely chopped
3/4 cup carrots, diced
3/4 cup celery, diced
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter
3 cups chicken broth
4 cups potatoes, peeled and cubed
1/4 cup all-purpose flour
2 cups sharp cheddar cheese, shredded
1 cup pepper jack cheese, shredded
1 1/2 cups milk
Salt and pepper to taste

Instructions

In a large pot, brown the ground beef over medium-high heat until fully cooked. Drain excess fat.
In the same pot, melt the butter and sauté the onions, carrots, and celery until softened.
Stir in the flour and cook for 1 minute to create a roux.
Slowly whisk in the chicken broth, then add the potatoes, dried basil, and parsley.
Bring the soup to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Stir in the milk and both cheeses, stirring constantly until the cheese is melted and the soup is smooth.
Season with salt and pepper to taste and serve warm.

Notes

For a creamier texture, you can use half-and-half instead of milk. This soup freezes well without the cheese if you prefer to add the dairy upon reheating.
