A no-bake layered dessert, this Blueberry Lemon Heaven combines a buttery graham cracker crust, a light and tangy lemon-cream filling, and a fresh blueberry topping. Perfectly refreshing and easy to make, it’s an ideal chilled treat for spring and summer gatherings.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar

For the Creamy Layer:

  • 1 cup heavy cream
  • 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

For the Blueberry Topping:

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions

1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

2. Press the mixture firmly into the bottom of a 9×9-inch baking dish to form an even crust layer. Set aside.

3. In a large bowl, whip the heavy cream until soft peaks form. Set aside.

4. In another bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, lemon juice, lemon zest, and vanilla extract, mixing until well combined.

5. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

6. Pour the creamy lemon layer over the prepared crust and spread it evenly. Smooth the top with a spatula.

7. Cover the dish with plastic wrap and refrigerate for at least 4 hours or until set.

8. In a small bowl, combine the fresh blueberries, granulated sugar, and lemon juice. Gently toss to coat the blueberries.

9. Allow the blueberry topping to sit for about 15 minutes to release juices.

10. Once the creamy layer is fully set, remove the dessert from the refrigerator and top with the blueberry mixture.

11. Cut into squares and serve chilled.

Notes

For best results, chill the dessert overnight to allow the layers to fully set.

You can substitute frozen blueberries for fresh—just thaw and drain them well first.

To make ahead, prepare the base and creamy layer the day before and add the blueberry topping just before serving.
