Ingredients

1 teaspoon maple syrup

Instructions

Preheat your oven to 400°F (200°C).
Toss diced sweet potatoes with olive oil, salt, and pepper, then roast for 25-30 minutes until tender and golden.
While potatoes roast, cook the wild rice according to package instructions until tender.
In a small saucepan over medium heat, melt the butter, swirling until it browns and smells nutty, then remove from heat.
Whisk the apple cider vinegar and maple syrup into the browned butter to create the dressing.
In a large bowl, massage the kale with a pinch of salt to soften it.
Assemble the bowls by layering the wild rice, massaged kale, roasted sweet potatoes, and fresh diced apples.
