2 cups chopped lettuce
1 cup chopped cucumber
1/2 cup halved cherry tomatoes
1/4 cup chopped red onion
1 celery stalk, diced
2 tbsp sweet pickle relish
1/4 cup mayonnaise
1 tbsp apple cider vinegar
1 tsp Dijon mustard
Salt and pepper to taste
Shred rotisserie chicken meat into bite-sized pieces
In a large bowl, combine lettuce, cucumber, cherry tomatoes, red onion, celery, and sweet pickle relish
