A fast, flavorful salad using pre-cooked rotisserie chicken, crisp veggies, pickled tang, and a zesty dressing. Perfectly balanced textures for a satisfying meal in minutes.

Ingredients

1 (3-4 lb) rotisserie chicken, meat shredded
2 cups chopped lettuce
1 cup chopped cucumber
1/2 cup halved cherry tomatoes
1/4 cup chopped red onion
1 celery stalk, diced
2 tbsp sweet pickle relish
1/4 cup mayonnaise
1 tbsp apple cider vinegar
1 tsp Dijon mustard
Salt and pepper to taste

Instructions

Shred rotisserie chicken meat into bite-sized pieces
In a large bowl, combine lettuce, cucumber, cherry tomatoes, red onion, celery, and sweet pickle relish
In a small jar, mix mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper
Pour dressing over salad and toss until evenly coated
Chill 5 minutes (optional) before serving

Notes
