Golden, crispy, cheesy, and packed with savory turkey and tangy Dijon mustard, these Turkey Dijon Melt Sandwiches are the ultimate comfort food lunch or dinner.

  • 8 slices sandwich bread (white, wheat, or sourdough work well)
  • 4 tablespoons mayonnaise
  • 8 ounces sliced turkey (deli or leftover roasted turkey)
  • 6 ounces Monterrey Jack cheese, sliced
  • 1/2 medium red onion, thinly sliced
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons honey Dijon mustard
  • 4 tablespoons butter, softened

Instructions

1. Lay out all 8 slices of bread on a clean work surface. Spread mayonnaise evenly on one side of 4 slices – this will be the inside of your sandwiches. On the other 4 slices, spread honey Dijon mustard on one side.

2. On the mayo-spread slices, layer the turkey evenly, followed by the sliced red onion. Season lightly with salt and pepper. Add the Monterrey Jack cheese slices, ensuring they cover the turkey completely. Top with the mustard-spread bread slices, mustard side down.

3. Spread softened butter evenly on the outside of each sandwich (the sides that will touch the pan).

4. Heat a large skillet or griddle over medium heat. Place sandwiches in the pan and cook for 3-4 minutes until the bottom is golden brown. Carefully flip and cook another 3-4 minutes until the second side is golden and the cheese is fully melted.

5. Remove from heat and let cool for 1 minute before slicing diagonally. Serve immediately while the cheese is still melty and the bread is crispy.
