Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced into 1/2-inch pieces
  • 1 package (6 ounces) stove top chicken flavor stuffing mix
  • 1 can (10.5 ounces) cream of chicken soup, undiluted
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 cup unsalted butter, melted
  • 1 cup frozen mixed vegetables, thawed (peas, carrots, corn blend)
  • 1/2 cup onion, finely diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Preheat oven to 375°F and grease a 9×13 inch baking dish.

2. In a medium saucepan, melt the butter over medium heat. Stir in the stuffing mix until evenly moistened.

3. Press half of the stuffing mixture into the bottom of the baking dish to form a crust layer.

4. In a large mixing bowl, whisk together cream of chicken soup, sour cream, and chicken broth until smooth.

5. Add diced onion, garlic powder, black pepper, and paprika. Stir to combine.

6. Gently fold in the cooked chicken and thawed mixed vegetables until evenly coated.

7. Pour the chicken mixture over the stuffing layer and spread evenly with a spatula.

8. Sprinkle shredded cheddar cheese evenly over the chicken mixture.

9. Top with remaining stuffing mixture, loosely crumbled for texture.

10. Cover the dish with foil and bake for 25 minutes.

11. Remove foil and bake uncovered for an additional 15–20 minutes, until topping is golden and casserole is bubbling.

12. Let rest for 10 minutes before serving.

13. Garnish with fresh chopped parsley before serving.

Notes

Use rotisserie chicken for deeper flavor and convenience.

Letting the casserole rest after baking ensures clean slices and improved flavor.

Add extra broth for a softer stuffing topping if preferred.

Store leftovers in an airtight container in the fridge for up to 3 days.
