A creamy and flavorful chicken salad inspired by Mexican street corn, featuring tender chicken, sweet corn, crisp cucumber, and a zesty lime dressing.

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

1. Grill or roast the chicken until fully cooked, then dice it into bite-sized pieces.

2. If using fresh corn, grill it until lightly charred and cut the kernels from the cob. If using canned corn, drain it well.

3. Dice the cucumber and finely chop the red onion.

4. In a large bowl, whisk together mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper until smooth.

5. Add the diced chicken, corn, cucumber, and red onion to the bowl and gently fold everything together until evenly coated.

6. Stir in the chopped cilantro and mix well.

7. Taste the salad and adjust seasoning with additional salt or lime juice if needed.

8. For best flavor, chill the salad in the refrigerator for about 10 minutes before serving.

9. Transfer to a serving bowl and garnish with crumbled feta cheese if desired, then serve.

Notes

Grilled corn adds extra smoky flavor, but canned or frozen corn works well for convenience.

You can substitute sour cream for Greek yogurt if desired.

This salad can be served on its own, in lettuce wraps, or as a filling for sandwiches and wraps.
