  • 2 pounds of baby potatoes or Yukon Gold potatoes
  • 1 packet of Lipton onion soup mix
  • 1 cup of beef broth or chicken broth
  • ¼ cup of unsalted butter, cut into small pieces
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Wash the potatoes thoroughly; peel if desired.

2. Place the potatoes in the bottom of the slow cooker.

3. Sprinkle the Lipton onion soup mix over the potatoes.

4. Pour in the beef or chicken broth.

5. Dot the top with small pieces of butter.

6. Season with salt and pepper, cover, and cook on low for 6–8 hours or high for 3–4 hours.

7. Check for tenderness, garnish with parsley, and serve.
