  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 5 large potatoes, peeled and cut into chunks or diced
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika
  • 1 cup shredded cheddar cheese

Instructions

1. In a skillet over medium heat, brown the ground beef with the chopped onion, minced garlic, and diced red bell pepper until fully cooked.

2. Stir occasionally until vegetables are tender. Drain any excess fat from the mixture.

3. In a mixing bowl, whisk together the condensed cream of mushroom soup, milk, salt, black pepper, and paprika until well combined.

4. Place half of the diced potatoes in the bottom of your slow cooker.

5. Top with half of the cooked beef mixture followed by half of the soup mixture.

6. Repeat these layers with the remaining potatoes, beef mixture, and soup mixture.

7. Cover and cook on low for 5–6 hours or until potatoes are tender.

8. Sprinkle shredded cheddar cheese over the casserole.

9. Cover again and cook for an additional 20 minutes until cheese is melted.

10. Sprinkle with chopped parsley before serving.
