The BEST simple potato soup made on the stovetop with just a few basic ingredients. Chunky, comforting, and done in 40 minutes!

Ingredients

  • 2 tablespoons oil
  • 1 tablespoon butter
  • 1 large carrot, diced, minced, or grated
  • 1 yellow onion, diced, minced, or grated
  • 1 garlic clove, minced
  • Salt, to taste
  • Ground pepper, to taste
  • 1 tablespoon paprika (mild, spicy, or smoky)
  • 1 tablespoon white flour
  • 45 cups vegetable or chicken broth (or water with 1 bouillon cube or 1 tsp stock powder)
  • 2 large potatoes (about 14oz / 400g), diced small
  • 13.5 ounces heavy cream, to taste
  • 12 tablespoons fresh parsley (or 1 teaspoon dried)

Instructions

1. In a medium pot, heat oil and butter over medium heat. Add carrot, onion, and garlic. Sauté until translucent.

2. Add paprika, salt, pepper, and flour. Stir and sauté for 1–2 minutes.

3. Add broth and bring to a boil.

4. Add diced potatoes and simmer for 25 minutes on medium-high heat.

5. Add heavy cream and simmer for another 5–10 minutes.

6. Garnish with parsley and serve warm.

7. Store in the fridge for up to 1 day. Reheat before serving. Do not freeze.

Notes

For a creamier soup, mash some of the potatoes before adding the cream.

Use smoked paprika for a deeper flavor or hot paprika for a spicy kick.

Great as a starter or light dinner with crusty bread.

Adjust cream to desired richness — even 1 ounce adds plenty of creaminess.

Do not freeze this soup, as the potatoes and cream may separate when thawed.
