  • 2 cups pumpkin puree (fresh or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh sage leaves, finely chopped (plus extra for garnish)
  • 3 cups vegetable broth
  • 1 cup coconut milk (or heavy cream for a richer flavor)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • Salt and pepper, to taste
  • 1 tbsp maple syrup (optional, for sweetness)
  • Crusty bread, for serving

Instructions

1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.

2. Stir in garlic and sage, cooking for 1 minute until fragrant.

3. Add pumpkin puree, cumin, and nutmeg. Stir and cook for 2-3 minutes.

4. Slowly pour in vegetable broth, stirring until combined. Simmer 15 minutes.

5. Remove from heat. Blend with immersion blender (or in batches in countertop blender) until smooth.

6. Return to low heat. Stir in coconut milk or heavy cream. Season with salt, pepper, and maple syrup if using. Warm gently without boiling.

7. Serve hot, garnished with fresh sage and a drizzle of olive oil. Enjoy with crusty bread.

Notes

Use fresh pumpkin puree for a deeper flavor, but canned works perfectly for convenience.

For vegan or dairy-free, stick with coconut milk.

Adjust sweetness with maple syrup depending on your preference.
