  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14 ounces each) crushed tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • Fresh basil for garnish (optional)

Instructions

1. Heat butter and olive oil in a large pot over medium heat. Add chopped onion and cook until soft and translucent.

2. Add minced garlic and cook for about 1 minute while stirring gently until fragrant.

3. Pour in the crushed tomatoes and vegetable broth. Stir well and bring to a gentle simmer. Cook for about 15 minutes to develop flavor.

4. Add sugar, salt, and black pepper. Stir and taste, adjusting seasoning if necessary. Continue cooking on low heat for about 5 minutes.

5. Turn off the heat and blend the soup until smooth using an immersion blender. If using a standard blender, allow the soup to cool slightly and blend in batches.

6. Return the soup to low heat and slowly stir in the heavy cream until the soup becomes creamy and smooth.

7. Heat gently for about 2 minutes without boiling.

8. Ladle the soup into bowls and garnish with fresh basil if desired. Serve warm with bread or grilled cheese.
