Pepper Steak with Bell Peppers and Onion is a quick and flavorful Asian-inspired stir-fry featuring tender flank steak, colorful bell peppers, and sweet onions coated in a savory garlic-ginger sauce. Ready in just 25 minutes, itโ€™s perfect for busy weeknight dinners.

  • 1 pound flank steak, thinly sliced against the grain
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame oil
  • Optional: 1/2 teaspoon red pepper flakes

Instructions

1. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and red pepper flakes if using. Set aside.

2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and stir-fry for 2โ€“3 minutes until browned and just cooked through. Remove from the skillet and set aside.

3. Add the remaining tablespoon of oil to the skillet. Stir-fry the bell peppers and onion for 4โ€“5 minutes until tender but still crisp.

4. Return the cooked beef to the skillet and pour the prepared sauce over the mixture. Stir well to coat evenly and cook for another 2โ€“3 minutes until the sauce thickens.

5. Remove from heat and serve hot over steamed rice or noodles. Garnish with sesame seeds or sliced green onions if desired.

Notes

Slice the steak thinly against the grain for maximum tenderness.

Use a variety of colorful bell peppers for the best presentation.

Substitute hoisin sauce or extra soy sauce if oyster sauce is unavailable.
