Ingredients

Scale

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

Instructions

1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a large bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in eggs one at a time, then mix in vanilla extract.

4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture and stir until just combined.

5. Scoop tablespoon-sized balls of dough onto prepared sheets. Press each ball gently with a fork to create a crisscross pattern.

6. Bake 9–11 minutes until edges are set but centers are soft. Cool on baking sheet 5 minutes before transferring to a wire rack.

Notes

For extra chewy cookies, slightly underbake them and let them finish setting on the baking sheet.

You can use chunky peanut butter for added texture if desired.

Store in an airtight container at room temperature for up to 5 days, or freeze for up to 2 months.
