Mediterranean Chicken Patties are juicy, herb-packed patties made with lean ground chicken, fresh dill, spinach, and warm spices. Quick to prepare and full of vibrant Mediterranean flavor, theyโ€™re perfect for weeknight dinners or family gatherings.

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sautรฉ the diced onion for about 5 minutes until translucent, then add the minced garlic and cook for 30 seconds more. Remove from heat and let cool slightly.

2. In a large bowl, combine the sautรฉed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Mix until well combined.

3. Form the mixture into about 8 patties, each approximately 1/2 inch thick.

4. Heat the remaining olive oil in the same skillet over medium heat. Cook the patties for 5โ€“6 minutes per side, or until golden brown and cooked through to an internal temperature of 165ยฐF.

5. Transfer to a paper towel-lined plate to drain excess oil. Serve warm in pita bread, over salad, or with your favorite dipping sauce.

Notes

Do not overmix the chicken mixture to keep the patties tender.

If the mixture feels too wet, add a tablespoon of breadcrumbs at a time until it holds together.

These patties pair well with tzatziki sauce, hummus, or a simple cucumber-tomato salad.

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
