  • 4 whole fish fillets (such as snapper or cod)
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 3 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

Instructions

1. Preheat oven to 400°F (200°C).

2. Lightly grease a baking dish with olive oil.

3. Pat fish fillets dry and season both sides with salt, black pepper, and dried oregano.

4. Heat olive oil in a skillet over medium heat and sauté onions until translucent, about 5 minutes. Add bell pepper and zucchini and cook until tender. Stir in garlic and cook for 1 minute.

5. Spread sautéed vegetables evenly in the baking dish and place fish fillets on top.

6. Scatter cherry tomatoes, parsley, and dill over the fish. Drizzle with lemon juice and sprinkle lemon zest.

7. Cover with foil and bake for 20 minutes.

8. Remove foil and bake an additional 5–10 minutes until fish flakes easily.

9. Remove from oven, let rest briefly, and garnish with extra herbs and lemon wedges before serving.

Notes

Serve with crusty bread, rice, or a light salad for a complete meal.

Use fresh, firm white fish for best results.

Adjust herbs and seasoning to taste for variation.
