Marry Me Chicken Pasta is a creamy, flavorful dish featuring tender chicken, sun-dried tomatoes, Parmesan, and spinach tossed with pasta. It’s a quick, irresistible dinner that feels like pure comfort food.

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 ounces fettuccine or pasta of choice
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Optional: fresh basil for garnish
  • Optional: crushed red pepper flakes for spice

Instructions

1. Begin by boiling water in a large pot. Add a pinch of salt and cook pasta according to package instructions until al dente. Drain and set aside.

2. Season chicken breasts with salt and pepper.

3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook for 5–7 minutes per side until golden brown and cooked through. Remove and set aside.

4. In the same skillet, sauté garlic for about 1 minute until fragrant.

5. Stir in chopped sun-dried tomatoes and cook for another minute.

6. Pour in heavy cream and chicken broth. Stir until well combined and bring to a gentle simmer.

7. Gradually whisk in Parmesan cheese until sauce thickens slightly.

8. Slice chicken and return it to the skillet. Add spinach and cooked pasta, tossing everything in the creamy sauce.

9. Season with Italian seasoning, salt, and pepper to taste.

10. Cook for 2–3 minutes until heated through. Garnish with fresh basil or red pepper flakes if desired and serve.

Notes

For added flavor, deglaze the skillet with a splash of white wine before adding cream. Use penne or rigatoni instead of fettuccine if preferred.
