Soft, cake-like brownies topped with a rich chocolate frosting, just like the classic school cafeteria treat known as Lunch Lady Brownies.

Ingredients

  • 1 cup salted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract
  • 1/4 cup salted butter, softened
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder (for frosting)
  • 3 cups powdered sugar

Instructions

1. Preheat oven to 350ยฐF. Line a 9×13-inch baking dish with parchment paper and spray with non-stick spray.

2. In the bowl of a stand mixer, combine melted butter and cocoa powder using the paddle attachment until smooth.

3. Add flour and sugar and beat together. Add eggs and vanilla extract and mix just until combined without overmixing. The batter will be thick.

4. Spread the batter evenly into the prepared baking dish.

5. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.

6. Remove brownies from the oven and let them rest for about 15 minutes. The brownies should still be warm before frosting.

7. For the frosting, beat together softened butter, milk, cocoa powder, and powdered sugar until smooth.

8. Spread the chocolate frosting evenly over the warm brownies.

9. Allow brownies to cool completely before cutting into squares and serving.

Frost the brownies while they are still slightly warm so the frosting spreads easily and creates the classic smooth topping.

Allow the brownies to cool fully before slicing for cleaner cuts.
