  • ½ cup yellow onion, diced
  • ½ cup red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon oregano
  • ⅛ teaspoon red pepper flakes
  • 3 cups sweet potatoes, peeled and cubed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup water
  • 1 cup shredded cheese (optional)

Instructions

1. Add ground beef, onion, bell pepper, and garlic to a skillet over medium heat. Break up the beef into chunks and cook until browned. Drain excess fat.

2. Add chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes. Stir and cook for 1 minute.

3. Add sweet potatoes, black beans, and water. Stir to combine. Reduce heat to medium-low and cover.

4. Cook for 15–20 minutes until sweet potatoes are fork-tender.

5. Remove lid and cook uncovered for 2–3 minutes to evaporate remaining liquid.

6. Remove from heat. Sprinkle cheese over top and cover skillet. Let sit for 5 minutes to melt cheese.

7. Serve hot with your favorite toppings.
