Easy cilantro lime rice bowls packed with fresh flavors, tender chicken, beans, corn, and a creamy cilantro lime sauce—perfect for a quick weeknight dinner.

  • 1 tablespoon avocado oil
  • 1 1/4 cup basmati rice
  • 1 teaspoon minced garlic
  • 2 cups water or broth
  • 1 teaspoon lime zest
  • 1 teaspoon salt
  • 1/3 cup lime juice
  • 1 1/4 cup chopped cilantro leaves
  • 3/4 cup black beans, drained
  • 1/2 cup corn
  • 2 cups cooked chicken, shredded or cubed
  • 1/2 cup diced tomatoes
  • 1 medium avocado, cubed
  • 1/2 cup cilantro lime sauce
  • Fresh cilantro for garnish (optional)

Instructions

1. In a Dutch oven or medium saucepan, heat the avocado oil over medium-high heat and lightly toast the rice until it begins to brown.

2. Add the garlic, water or broth, lime zest, and salt, then bring to a boil.

3. Reduce heat to low, cover, and simmer for 7–8 minutes, stirring occasionally to prevent sticking.

4. Add the lime juice and continue cooking with the lid on for another 2–3 minutes.

5. Remove from heat, uncover, and stir in the chopped cilantro. Fluff the rice with a fork.

6. Divide the rice into bowls and top with black beans, corn, chicken, tomatoes, and avocado.

7. Drizzle each bowl with cilantro lime sauce, garnish with fresh cilantro if desired, and serve.

Notes

Use broth instead of water for more flavorful rice.

You can substitute chicken with shrimp or tofu for variation.

Adjust lime juice to taste depending on desired tanginess.
