This lemon cake mix brownies recipe is made with a cake mix and only a handful of other ingredients, creating an easy, gooey brownie that lemon lovers adore!
Lemon Brownies:
Lemon Glaze:
1. Preheat oven to 350°F and grease an 8×8 baking dish with cooking spray.
2. In a medium mixing bowl, mix together the cake mix, eggs, oil, and vanilla until evenly combined.
3. Press brownie batter (it will be thick) into the baking dish, spreading evenly and pressing all the way to the sides.
4. Bake at 350°F for 18–20 minutes or until a toothpick inserted in the center comes out clean.
5. While brownies are baking, prepare lemon glaze. In a small bowl, mix powdered sugar with lemon juice (about 2 tablespoons). Add milk by the teaspoon if needed to thin.
6. Remove brownies from oven and place dish on cooling rack.
7. Once brownies are cool, pour lemon glaze on top and spread evenly with a spoon.
8. Allow glaze to harden, then cut into 9 equal squares and serve.
Betty Crocker lemon cake mix yields the best result. Other brands like Duncan Hines may not perform as well.
For a different twist, you can use lime or orange zest and juice instead of lemon.
Canned frosting can be used instead of lemon glaze for a thicker icing.
Don’t make glaze too thin or it won’t set properly.
