  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1⁄4 cup honey
  • 1⁄4 cup apple cider vinegar
  • 1⁄4 cup water
  • 1 tablespoon cornstarch

Instructions

1. Preheat the oven to 375°F (190°C).

2. Season the chicken breasts with salt and black pepper on both sides.

3. In a large oven-safe skillet, heat the olive oil over medium-high heat.

4. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.

5. Remove the chicken from the skillet and set aside.

6. In the same skillet, add the diced jalapenos and peaches.

7. Cook for 2-3 minutes until slightly softened.

8. In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until smooth.

9. Pour the honey mixture over the jalapenos and peaches.

10. Stir well and bring to a simmer.

11. Return the chicken breasts to the skillet, spooning some of the sauce over the top.

12. Transfer the skillet to the preheated oven.

13. Bake for 20-25 minutes or until the chicken is cooked through.

14. Remove from the oven and let it rest for a few minutes before serving.
