  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste

Instructions

1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.

2. Heat olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.

3. Add the shrimp to the skillet and cook for about 3 minutes per side until pink and opaque.

4. Stir in the chicken broth, lemon juice, and lemon zest and let the mixture simmer for about 2 minutes to blend the flavors.

5. Add the cooked orzo to the skillet and toss everything together until well combined.

6. Season with salt and pepper to taste.

7. Serve warm garnished with freshly chopped parsley.

Notes

Use fresh lemon juice for the best bright flavor.

Avoid overcooking shrimp as they can become rubbery.

You can add spinach or cherry tomatoes for extra color and nutrients.

Serve with additional lemon wedges for extra citrus flavor.
