A fresh and vibrant peach salad made with juicy ripe peaches, leafy greens, creamy cheese, toasted nuts, and a light homemade dressing for the perfect sweet and savory balance.

Ingredients

  • 4 cups baby spinach or arugula
  • 2 ripe peaches, thinly sliced
  • 1/4 cup crumbled feta or goat cheese
  • 1/4 cup thinly sliced red onion (optional)
  • 1/4 cup toasted pecans or sliced almonds
  • 2 tablespoons chopped fresh basil or mint
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

1. In a small bowl or jar, whisk together olive oil, balsamic vinegar or lemon juice, honey, Dijon mustard, salt, and pepper until well combined. Set aside.

2. Thinly slice the peaches. Slice the red onion if using. Toast the pecans or almonds in a dry skillet over medium heat for 2–3 minutes until fragrant, then let them cool.

3. Place the baby spinach or arugula in a large bowl or serving platter.

4. Add the sliced peaches, red onion, crumbled feta or goat cheese, toasted nuts, and chopped herbs.

5. Drizzle the dressing over the salad just before serving. Toss gently to combine and coat evenly. Serve immediately.

Notes

For extra flavor, grill the peach halves before slicing. Brush lightly with olive oil and grill for 2–3 minutes per side until grill marks appear.

Both feta and goat cheese work well, adding a creamy and tangy contrast to the sweet peaches.

This salad pairs beautifully with grilled chicken, fish, or crusty bread.

Use ripe but firm peaches so they hold their shape when sliced.
