Juicy honey lime marinated chicken served over creamy avocado rice for a vibrant, refreshing Mediterranean-inspired dinner perfect for busy weeknights.

For the Chicken

  • 4 boneless, skinless chicken breasts (thighs can also be used)
  • 3 tablespoons honey (or maple syrup)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons olive oil (or avocado oil)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin (or coriander)
  • 1 teaspoon smoked paprika (or regular paprika)
  • Salt to taste
  • Black pepper to taste

For the Rice

  • 2 cups cooked jasmine or basmati rice (or cauliflower rice for low-carb)
  • 1 medium ripe avocado
  • 1 tablespoon extra lime juice
  • 1 tablespoon olive oil
  • Salt to taste

Optional Add-Ins

  • Fresh cilantro or parsley, for garnish
  • Chili flakes, for heat
  • 1 tablespoon toasted sesame seeds, for garnish

Instructions

1. In a bowl, whisk together honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and pepper.

2. Coat the chicken thoroughly in the marinade. Cover and refrigerate for 30 minutes to 2 hours for best flavor.

3. Preheat a grill pan over medium-high heat and lightly oil the surface.

4. Cook the marinated chicken for 5โ€“6 minutes per side, or until golden brown and the internal temperature reaches 165ยฐF (75ยฐC). Baste with reserved marinade if desired.

5. Remove the chicken from heat and let it rest for a few minutes before slicing.

6. In a separate bowl, mash the ripe avocado until smooth. Stir in lime juice, olive oil, and salt.

7. Fold the warm cooked rice into the avocado mixture until creamy and well combined.

8. Using a mold or bowl, layer the avocado rice onto serving plates and top with sliced chicken.

9. Garnish with fresh cilantro or parsley, lime zest, chili flakes, and toasted sesame seeds if desired.

10. Serve immediately with an extra squeeze of lime juice.

Notes

For best flavor and texture, combine the chicken and avocado rice just before serving.

If preparing ahead, store the chicken and rice separately and assemble when ready to eat.

Chicken thighs can be used for a juicier option.

Cauliflower rice works well as a low-carb alternative.
