This hearty and healthy bowl pairs tender chicken with roasted sweet potatoes and a simple tahini drizzle. It’s easy, nourishing, and so satisfying.

Ingredients

  • 1 lb chicken breast, diced and seasoned with salt and pepper
  • 2 cups sweet potatoes, diced
  • 2 cups cooked brown rice
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Tahini Drizzle:
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp water

Instructions

1. Toss sweet potatoes with olive oil, paprika, salt, and pepper. Roast at 400°F (200°C) for 20 minutes.

2. Cook chicken in a skillet until browned and cooked through.

3. Whisk tahini, lemon juice, and water for the drizzle.

4. Layer rice, chicken, and sweet potatoes in bowls. Drizzle with tahini sauce before serving.

Notes

For extra flavor, garnish with fresh parsley or a sprinkle of sesame seeds. You can also meal prep this dish—it stores well in the fridge for up to 3 days.
