  • 1 lb ground beef
  • 1 onion, diced
  • 2 cups potatoes, cubed
  • 1 cup peas
  • 1 cup corn
  • 14 oz can diced tomatoes
  • 1 cup carrots, diced
  • 1 red pepper, diced
  • 1 cup celery, diced
  • 1 cup tomato sauce
  • 3 cups beef broth
  • 1/2 tsp oregano
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tbsp Worcestershire sauce

Instructions

1. Place a large pot over medium heat and add the ground beef.

2. Once the beef is partially cooked, add the diced onion, celery, carrot, and red pepper.

3. Sauté the mixture until the onions become translucent.

4. Add the remaining ingredients to the pot: potatoes, peas, corn, diced tomatoes, tomato sauce, beef broth, oregano, kosher salt, black pepper, smoked paprika, garlic powder, and Worcestershire sauce.

5. Reduce the heat to low.

6. Simmer for about 30 minutes, until vegetables are tender and flavors are well combined.

7. Serve hot and enjoy.

Notes

You can use frozen vegetables for convenience.

Add chili flakes for a spicy kick.

Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
