Hamburger Noodle Soup is a hearty and comforting one-pot meal made with ground beef, tender egg noodles, and savory vegetables in a rich beef broth. Perfect for a satisfying family dinner on chilly nights.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 carrots, chopped
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 8 cups beef stock
  • 1 (14 oz) can diced tomatoes
  • 2 cups egg noodles
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

1. Heat a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

2. Add the ground beef and cook until browned, breaking it up with a spoon.

3. Stir in the chopped carrots, diced celery, and minced garlic. Cook for 2-3 minutes.

4. Pour in the beef stock and add the diced tomatoes, bay leaf, thyme, salt, and pepper.

5. Bring to a simmer and cook for 20 minutes to develop the flavors.

6. Add the egg noodles and cook until tender, about 8-10 minutes.

7. Taste and adjust seasoning as needed.

8. Remove bay leaf and garnish with fresh parsley before serving.

Notes

For a thicker soup, blend 1 cup of broth with 1/4 cup of flour and stir it back in.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze the soup without noodles for up to 3 months to prevent them from getting mushy.

Add other vegetables like green beans or corn for extra texture and flavor.
