Grilled Chicken with Pepperoncini Garlic Butter is a bold and flavorful Mediterranean-inspired dish. Juicy, spice-rubbed chicken breasts are grilled and served with a fresh cucumber-tomato salad, tangy feta, and a buttery pepperoncini garlic sauce for the perfect zippy finish.

Grilled Chicken:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon coarse kosher salt
  • 1 lb. chicken breasts
  • 1 tablespoon olive oil

Pepperoncini Butter Sauce:

  • 6 tablespoons butter
  • 1 clove garlic, minced
  • 1/4 cup pepperoncini brine
  • 1/4 to 1/2 cup pepperoncinis, chopped

Cucumber Salad:

  • 1 pint cherry or grape tomatoes, halved
  • 1/2 cucumber, chopped
  • 1/4 red onion, minced or thinly sliced
  • Salt and pepper, to taste
  • Olive oil, to taste
  • Vinegar, to taste

Extras:

  • Chives
  • Feta
  • Hummus
  • Pita Bread

Instructions

1. Place chicken, garlic powder, onion powder, paprika, salt, and olive oil in a bowl or bag. Toss to coat and marinate in the fridge for at least 30 minutes or up to several hours.

2. Toss halved tomatoes, chopped cucumber, and red onion with a pinch of salt, pepper, olive oil, and vinegar. Set aside.

3. Melt butter in a microwave-safe bowl. Stir in minced garlic, pepperoncini brine, and chopped pepperoncinis. Set aside.

4. Grill chicken using a grill, grill pan, or skillet over medium heat until golden brown and cooked through, reaching an internal temperature of 160°F. Let rest, then slice.

5. To serve, layer hummus on a platter. Add cucumber salad in small mounds around the edges. Place sliced chicken in the center and drizzle with pepperoncini butter sauce.

6. Top with feta, chives, salt, and pepper. Serve warm with pita bread for scooping.

Notes

Warm the pepperoncini garlic butter just before serving so it remains silky and smooth.

For best results, serve while the butter and chicken are still warm.
