  • 2 boneless, skinless chicken breasts
  • 4 cups broccoli florets
  • 2 tablespoons olive oil (divided)
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh lemon juice
  • Creamy Garlic Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

1. In a bowl, mix olive oil, lemon juice, smoked paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken and marinate 20 minutes.

2. Grill chicken 5–7 minutes per side until cooked through. Let rest and slice.

3. Steam or sauté broccoli until tender-crisp.

4. Mix all sauce ingredients until smooth.

5. Assemble bowls with chicken and broccoli. Drizzle with sauce and garnish.

Notes

You can swap broccoli for other vegetables like zucchini, bell peppers, or asparagus.

To lighten it up further, use all Greek yogurt in place of mayonnaise.

Leftover sauce works great as a dip or sandwich spread.
