Ingredients

Scale
  • 1 lemon, juiced and zested
  • 1/4 cup extra virgin olive oil
  • 3 garlic cloves, finely minced (or 1 teaspoon dried garlic powder)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt, plus a pinch
  • 1/4 teaspoon coarse black pepper
  • 1 pound thin-sliced chicken breast
  • 1/4 cup feta cheese
  • 1/4 cup fresh parsley, chopped
  • Additional lemon wedges for serving

Instructions

1. In a large mixing bowl, combine lemon zest, lemon juice, olive oil, garlic, oregano, smoked paprika, sea salt, and black pepper. Mix until well combined and emulsified. Reserve 1/4 cup of the marinade for later.

2. Add the chicken to the remaining marinade and toss to coat completely. Cover and refrigerate for 30 minutes to marinate.

3. Heat a nonstick skillet over medium-high heat. Add a drizzle of olive oil once the pan is hot.

4. Place the marinated chicken into the skillet and sear until the bottom is golden brown.

5. Flip the chicken and cook for another 3โ€“4 minutes, or until the chicken is cooked through and the juices run clear.

6. Transfer the cooked chicken to a serving plate and drizzle with the reserved marinade.

7. Top with chopped parsley and feta cheese. Serve with additional lemon wedges.

Notes

Thin-sliced chicken breasts cook quickly and evenly, making them ideal for skillet recipes.

If chicken breasts are thick, slice them horizontally to create thinner cutlets.

Fresh lemon juice and zest provide the best flavor for this dish.

Serve with rice, roasted vegetables, or a fresh Greek salad for a complete meal.
