A bright and flavorful radish salad inspired by Gordon Ramsay, featuring thinly sliced radishes massaged with lemon, tossed with Parmesan and fresh dill.

Ingredients

  • 1 bunch radishes, thinly sliced (about 1/8-inch thick)
  • Juice and zest of 1 lemon
  • 1 tablespoon olive oil
  • 1/4 cup freshly grated Parmesan cheese, plus extra for topping
  • 2 tablespoons fresh dill, torn
  • Salt, to taste
  • Black pepper, to taste

Instructions

1. Thinly slice the radishes into even 1/8-inch rounds and place them in a bowl.

2. Squeeze the juice from half of the lemon over the radishes and add a generous pinch of salt. Massage gently for 1 to 2 minutes to soften slightly and tame the bite.

3. Add the olive oil, grated Parmesan, and torn dill. Toss gently to combine.

4. Transfer to a serving plate and finish with lemon zest, extra Parmesan, more dill, and freshly ground black pepper.

5. Serve immediately for best texture and flavor.

Notes

Use a mandoline for consistent radish thickness and even flavor.

Massage the radishes with lemon and salt just before dressing to avoid sogginess.

Do not store fully dressed, as radishes can wilt in oil. If making ahead, keep components separate and assemble just before serving.
