Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup (180ml) milk
  • ½ cup (120ml) vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Optional Add-ins (Choose 1 cup total):

  • Blueberries
  • Chocolate chips
  • Chopped nuts
  • Dried fruit

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C). Prep a 12-cup muffin tray by greasing it lightly or lining it with paper muffin cups.
  • Combine Dry Ingredients: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • Whisk Wet Ingredients: In another bowl, beat the eggs. Stir in the milk, oil (or melted butter), and vanilla until smooth.
  • Bring It Together: Slowly pour the wet mixture into the dry. Stir gently using a wooden spoon or spatula until just combined. Avoid overmixing.
  • Add Your Mix-ins: Fold in your preferred add-ins like blueberries or chocolate chips. Stir just enough to spread them evenly.
  • Fill and Bake: Spoon the batter into each muffin cup until about ¾ full. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Let muffins cool in the pan for 5 minutes. Then transfer to a wire rack to finish cooling. Enjoy warm or at room temperature!

Notes

  • Use room temperature eggs and milk for better texture.
  • For higher muffin tops, let the batter sit for 10 minutes before baking.
  • These freeze well—wrap individually and store for up to 3 months.
  • Try mixing two flavors (like blueberries and white chocolate) for fun combos.
