Ingredients

Scale

For the Crust:

  • 1½ cups (150g) graham cracker or digestive biscuit crumbs
  • ¼ cup (50g) granulated sugar
  • 6 tablespoons (85g) unsalted butter, melted

For the Filling:

  • 3 large egg yolks
  • 1 can (14 oz / 400g) sweetened condensed milk
  • ½ cup (120ml) freshly squeezed key lime juice (or regular lime juice if key limes aren’t available)
  • 1 tablespoon lime zest
  • ½ teaspoon vanilla extract

For the Whipped Topping:

  • 1 cup (240ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Extra lime zest or slices for garnish

Instructions

  • Preheat Your Oven: Preheat your oven to 350°F (175°C) while you prepare the crust.
  • Make the Crust: Mix the cracker crumbs, sugar, and melted butter in a bowl until it resembles wet sand.
  • Press Into Pie Dish: Firmly press the mixture into a 9-inch pie dish, covering the base and sides evenly.
  • Bake the Crust: Bake for 10 minutes until golden and set. Let it cool slightly before filling.
  • Prepare the Filling: In a medium bowl, whisk egg yolks with lime zest for 1–2 minutes. Add condensed milk, lime juice, and vanilla. Whisk until silky smooth.
  • Pour and Bake: Pour the filling into the baked crust and smooth the top. Bake for 12–15 minutes until the center is set but slightly jiggly.
  • Cool and Chill: Let the pie cool at room temperature, then chill in the fridge for at least 4 hours or overnight for best results.
  • Make the Whipped Cream: Beat the heavy cream, powdered sugar, and vanilla in a chilled bowl until soft peaks form.
  • Serve and Garnish: Top the chilled pie with whipped cream and garnish with lime slices or zest. Slice and enjoy!

Notes

  • Fresh lime juice makes a big difference in flavor—avoid bottled if possible.
  • For a stronger citrus flavor, increase zest slightly.
  • Don’t skip the chill time—it helps the pie firm up for clean slices.
