  • ¾ cup (150g) packed brown sugar
  • ½ cup (100g) white granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1¾ cups (220g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1½ cups (120g) rolled oats
  • 1 cup (80g) shredded coconut
  • 1½ cups (270g) chocolate chips (semi-sweet or dark)
  • 1 cup (100g) chopped pecans or walnuts

Instructions

Preheat the Oven: Get that oven hot—set it to 350°F (175°C). Line two baking trays with parchment for easy cleanup.

Cream the Butter and Sugars: In a large bowl, beat the softened butter with both sugars until fluffy and light in color.

Mix in Eggs and Vanilla: Crack in the eggs one at a time, mixing well. Add vanilla and stir until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

Make the Dough: Slowly blend the dry ingredients into the wet mixture until just combined—don’t overmix.

Add the Good Stuff: Fold in oats, shredded coconut, chocolate chips, and chopped nuts until evenly mixed.

Scoop the Dough: Drop large spoonfuls (about 2 tbsp each) onto your baking trays, spacing them 2 inches apart.

Bake to Golden Perfection: Bake for 10–12 minutes, or until edges are golden and the centers still look a touch soft.
