With fluffy baked eggs, sharp cheddar, and crispy bacon nestled inside toasted English muffins, this make-ahead sandwich is the perfect grab-and-go option for busy mornings, meal preppers, and hungry households. For the Egg Base:

  • 12 large eggs
  • 2 tablespoons whole milk
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

For the Sandwich Layers:

  • 12 English muffins, halved
  • 12 slices crispy cooked bacon (or sausage patties, ham, or Canadian bacon)
  • 12 slices of cheddar cheese (or your favorite melty cheese)

Instructions

  • Preheat & Prepare: Preheat your oven to 330°F (165°C). Grease a 9×13 inch baking dish to prevent sticking.
  • Whisk the Eggs: In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth and well combined.
  • Bake the Egg Sheet: Pour the egg mixture into your prepared baking dish. Bake for 18 to 22 minutes, or until the eggs are just set in the center. Let cool slightly, then slice into 12 squares.
  • Toast the Muffins (Optional but Recommended): Toast the muffin halves in a toaster or oven for extra structure and to avoid sogginess.
  • Build Your Sandwiches: Layer each muffin bottom with:

→ 1 egg square

→ 1 slice of cheddar cheese

→ 1 slice of bacon or alternate meat

→ Top with the other muffin half

  • Serve or Store: To eat right away, wrap sandwiches in foil and warm in the oven at 350°F (175°C) for 5 minutes. To store, wrap tightly in foil or parchment.
