Ingredients

  • 1 medium green or red cabbage, shredded
  • 2 tbsp unsalted butter or olive oil
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • ½ cup chicken or vegetable stock
  • 2 tbsp apple cider or balsamic vinegar
  • 1 tbsp brown sugar or honey (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp caraway or fennel seeds (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Sauté aromatics: Heat butter or oil in a large skillet. Add sliced onion and cook for 3–4 mins until soft. Stir in garlic and cook for 30 seconds.
  • Add cabbage & liquids: Add shredded cabbage. Pour in stock and vinegar. Add sugar, salt, pepper, and seeds (if using). Stir to combine.
  • Braise gently: Reduce heat to low. Cover and simmer for 20–25 minutes, stirring occasionally, until cabbage is soft and flavorful.
  • Finish & serve: Stir in parsley. Taste and adjust seasoning. Serve warm.
