Gordon Ramsay Blondies are chewy, buttery dessert bars made with brown sugar, vanilla, and simple pantry staples. These easy-to-make blondies skip the cocoa and focus on rich, caramel flavor with optional chocolate chips or nuts for extra indulgence. Ready in just 35 minutes, they’re the perfect quick treat for busy bakers, sweet tooth emergencies, or after-dinner cravings.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 ½ cups brown sugar (light or dark)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ cup white or dark chocolate chips (optional)
  • ½ cup chopped walnuts or pecans (optional)

Optional Garnish:

  • Sea salt flakes (for topping)
  • Caramel or melted chocolate drizzle

Instructions

  • Prep the Oven & Pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  • Mix Wet Ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract. Mix well.
  • Combine Dry Ingredients: In another bowl, whisk together flour, baking powder, and salt. Gently fold into the wet mixture until just combined.
  • Add Mix-ins: Stir in chocolate chips and nuts if using. Don’t overmix!
  • Bake the Blondies: Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes or until the edges are golden and the center is slightly soft.
  • Cool & Slice: Let cool in the pan for 10–15 minutes before slicing into squares. Enjoy warm or at room temp!

Notes

  • For a fudgier texture, slightly underbake and chill before slicing.
  • Add flaky sea salt on top before baking for a sweet-salty twist.
  • Store in an airtight container for up to 4 days or freeze individually wrapped bars for up to 3 months.
