  • 1¾ cups all-purpose flour
  • ¾ cup packed brown sugar
  • ½ cup unsalted butter, melted

  • ½ teaspoon baking powder
  • ½ teaspoon salt

  • Preheat and Prepare: Heat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment for easy removal.
  • Mash the Bananas: In a medium bowl, mash the bananas until mostly smooth with a fork. A few lumps are okay.
  • Mix Wet Ingredients: In a large bowl, whisk together the melted butter and brown sugar. Add in the eggs and vanilla extract, and whisk until smooth and combined.
  • Combine Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  • Fold Together: Add the dry mixture to the wet mixture and fold gently using a spatula. Stop mixing once just combined — overmixing can toughen the bread.
  • Add Mix-Ins (Optional): Stir in chopped nuts or chocolate chips if using.
  • Bake the Bread: Pour batter into prepared loaf pan. Bake for 50–55 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and Slice: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Slice once completely cooled.
