Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, peeled and diced
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional for heat)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

1. Grease your crockpot with olive oil or cooking spray to prevent sticking.

2. In a small bowl, mix garlic, Italian seasoning, salt, pepper, and red pepper flakes. Rub this mixture evenly over the chicken breasts.

3. Place the diced potatoes at the bottom of the crockpot.

4. Lay the seasoned chicken breasts on top of the potatoes.

5. Pour the chicken broth over the chicken and potatoes.

6. Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken is tender.

7. About 30 minutes before serving, sprinkle the grated Parmesan cheese over the chicken and potatoes. Cover and let it melt.

8. Shred the chicken in the crockpot with two forks to combine with the potatoes.

9. Garnish with chopped parsley if desired.

10. Serve hot and enjoy.

Notes

You can add vegetables like green beans or carrots during the last hour of cooking for a complete one-pot meal.

For added richness, stir in a splash of heavy cream with the Parmesan.
